We’ve been smoking fish in London for over a century so we think we have the hang of it now. It’s a carefully controlled procedure. Serve as shown with a salad for a tasty, healthy lunch.
Based on the remote island of Rousay in the Orkney Isles, an independent fish farmer, Hugh, is hand-rearing a small stock of high quality and high welfare freshwater rainbow trout. He is an experienced fish farmer with a wealth of knowledge and boasts he is the mostly northerly freshwater fish farmer in the UK, the only independent fish farmer in the Norther Isles and smallest producer in Scotland. His motivation behind starting up the farm is to try to bring something back to the community that will offer employment and encourage the younger generation to stay, rather than head to the mainland.
