Wild sea trout is a fantastic alternative to wild salmon. In fact, it’s pretty much the only alternative if you want a wild fish. Our fish are superb specimens netted in the River Tweed, one of the great fishing rivers, and is far superior to farmed sea trout which is a bright orange colour. Flavour-wise it tastes similar to wild salmon; perhaps a touch more delicate but with that same natural, slightly gamey flavour. Think unoaked chardonnay as opposed to oaked.
