This cheese is crafted carefully by hand, using methods that have changed little since the 17th Century. Cropwell Bishop Stilton has a rich tangy flavour, and a velvety-soft texture that makes it melt in the mouth. Serve with Spiced Apricot Compote and Seeded Crackers.
