Inspired by the bean to bar movement, Contour Chocolate founder James has a background working as a professional chef and chocolatier in London. Years of research, sampling and roasting has developed into finding a flavour profile which pairs well with other flavours, but is still just as enjoyable on its own. Each chocolate is hand tempered and moulded into chocolate discs, a thin format designed to help the chocolate melt easily, is shareable and visually inviting
Our carefully selected three flavours are made using sustainably sourced heirloom cocoa beans of the Chuno variety, grown in Jinotega, northern Nicaragua.
To create the Coffee Dark flavour, the cocoa beans are refined with a selection of sweet and fruity micro-lot coffees, chosen from Costa Rica.
For the Salted Hazelnut Dark Chocolate, after roasting, the cocoa beans are then refined with Kalahari desert salt and Italian Piedmont hazelnuts to create a smooth, salty, nutty chocolate. Grown in the hills of Langhe, Northern Italy, these hazelnuts are know for their exceptional, delicate flavour and are freshly roasted for each batch of chocolate. Desert salt has a unique flavour without the astringency associated with sea salt and contains essential minerals.
For the Salted Peanut Milk Chocolate, after roasting, the cocoa beans are then refined with Kalahari desert salt and South African Common Natal peanuts to create a smooth, salty and nutty chocolate. The Common Natal peanut is part of the Spanish variety, which has a sweeter and nuttier flavour and these are freshly roasted for each batch of chocolate. Desert salt has a unique flavour without the astringency associated with sea salt and contains essential minerals.
