Pickled herring is a delicacy in many parts of Northern Europe. Our extra-large rollmops are a cut above overly acidic supermarket versions. Serve with soured cream and rye or, as Hugh Fearnley-Whittingstall suggests, cut into bite-sized pieces and add to potato salad.
