    This silky smooth bisque is served in Forman’s Restaurant. Lobster shells are roasted off to intensify the flavour then flambéed in cognac to add a gentle kick. A rich stock is made with the shells, then we add double cream, a touch of tomato purée and butter. It’s sublime.

    The large bisque serves six so makes a very easy, very classy dinner party starter for less than £2.80 a head – in Scott’s or Sheekeys you’d pay a small fortune – or a memorable canapé served as shown in a smart shot glass.

    Lobster stock – which contains – Water, Lobster shell (29%) (CRUSTACEANS), Onion, Leek, Carrot, Garlic & Parsley), Cream (MILK), Brandy, Plain flour which contains – (WHEAT Flour (GLUTEN), Calcium Carbonate, Niacin, Iron, Folic Acid, Thiamin), Unsalted butter (MILK), Tomato puree, Salt & Pepper.
