THAT BANK HOLIDAY FEELING: SIMPLE, DELICIOUS

May is, without question, the finest month in the British calendar. Two bank holidays, the first wild fish of the season appearing in our smokehouse, the garden furniture finally earning its keep, and that particular lightness that comes with longer evenings and nowhere urgent to be. At Forman & Field, May is when we feel most ourselves. Here is what we think May deserves at the table and how we intend to make the most of every moment of it.

What should I serve my guests for the bank holiday weekend?

The answer, we think, is simpler than you might expect. A bank holiday spread does not need to be complicated. It needs to be good. The table pulled outside, glasses filled early, and food that arrives ready to impress,  leaving you free to look after your guests rather than the kitchen.

Start with something that draws people in the moment they arrive. Our Salmon & Scallop Kebabs, King scallops and Grade One Scottish salmon skewered on rosemary sprigs and bathed in sun-blush tomato oil,  do exactly that, sizzling on the grill while the first drinks are poured. Alongside them, a platter of pillowy blinis topped with crème fraîche and smoked salmon keeps everyone happily grazing while the main event is decided.

What mains should I serve for bank holiday weekend? 

Our Sage, Rosemary & Thyme, gloriously crackling Porchetta. Our Black Cod in Miso Sauce, with its impossibly deep caramelised glaze. Or a beautifully prepared Leg of Kentish Lamb, pink, sweet, and full of spring flavour.

On the side, our Roasted Heritage Beetroot, Smoked Mozzarella & Caramelised Pear Salad described by Lance Forman as the best salad he has ever eaten, brings colour, confidence, and a touch of the unexpected. Or something slightly different, our Whole Roasted Cauliflower in Miso is a dish packed with flavour and sure to be a winner. 

What desserts should I serve on bank holiday weekend?

Our Tarte Tatin, the French classic made in our kitchen with soft, juicy English apples and handmade puff pastry,  serve with our dreamy Crème Anglaise and is the kind of pudding that draws an involuntary sigh from the table. Alternatively, our Summer Pudding in a Pot. Bright, British, bursting with berries, and requiring nothing more than a teaspoon and a long, unhurried afternoon.
