Fresh Scallops
Pat the scallops dry with a kitchen towel and heat 1tbsp oil in a pan over high heat.
Cook scallops for 1-2 minutes on each side, until golden. Do not move the scallop once it touches the pan.
Remove from the pan and serve immediately with Black Pudding and crispy Bacon.
