Description
Our Double Baked Soufflé Suissesse is a dish for home chefs. An elegant starter made with matured Cheddar cheese, which now comes with a small pot of seasoned cream and grated English Pecorino cheese to pour over.
The Roux Brothers call this a Soufflé Suissesse, Lloyd Hardwick, our company director, trained with them, and we were all extremely sad to see that the Gavroche closed it’s Mayfair doors in 2024. With all of this in mind, our Cheese Soufflé is a both a heartfelt tribute and legacy.
Serve with Fine Dining Rolls or Seeded Crackers.

Unsalted butter (MILK), self-raising flour (GLUTEN), semi skimmed MILK, mature aged cheddar (MILK), free range EGG, chives, cream (MILK), seasoning. English Pecorino cheese (MILK), whipping cream (MILK)

Cooking instructions
To serve
Microwave Souffle for 30 seconds on full power in plastic basin and turn out into ovenproof dish. Or place in an ovenproof dish for 6-8 minutes in a preheated oven of 135c to warm souffle.
Gently warm the cream to soften avoiding it splitting, in bain marie or in pan and pour over the baked souffle and sprinkle the cheese over the top and grill until golden brown.
