Doesn’t this look fantastic? Well, the good news is it tastes terrific too.
Essentially it is carefully assembled layers of cooked mushroom, aubergine, asparagus, courgette and spinach wrapped in leek. Sounds simple but our chefs take great care to make sure it looks this beautiful. All you have to do is slice and plate.
A drizzle of truffle oil would add an extra piquancy.
Leeks, Spinach, Mushroom, Aubergine, Asparagus, Courgette, Agar Agar, Salt & Pepper
Carefully run a knife around the edges of the terrine to loosen and turn upside down on a chopping board to remove. Serve in finger-thick slices.
Add a drizzle of truffle oil for extra decadence!
