    Over 100 years ago, wild salmon flowed freely through our factory doors. Our founder, Harry Forman (a.k.a. Lance Forman’s great-grandfather), was one of the first to realise that the King of Fish could be found in British waters, and we have been in love with it ever since.  These beautiful fish are now extremely scarce with each having entirely different characteristics based on the journey of life they have led. Every wild fish is a unique product of its environment, the fish you will receive has lived a life of adventure and resilience, navigating both river and sea. The result is not only a delicious fish but a reflection of the natural beauty and biodiversity of its habitat. Factors as the specific section of the River Tweed where it has been caught, it’s diet and the conditions of the water all play a role in shaping its flavour, meaning that no two Wild Salmon are the exactly alike.

    Each wild fish that arrives with us from the River Tweed has a unique tag number. The tag number not only identifies your fish but also signifies its authenticity, allowing you to trace the origins of this fish back to the River Tweed.

    Due to fierce fishing restrictions that exist today, it is now nigh on impossible to source wild salmon in Britain. We are fortunate enough to be the last (and only!) supplier of the incredible River Tweed salmon in the world.

    These beautiful fish are extremely scarce, and will therefore be sold on a first come first served basis. Only those who are signed up to our Wild Salmon & Seatrout Mailing List will be informed of their availability.

    Portions of these beautiful fish can be baked, pan-fried, grilled, poached or steamed. They are also fabulous, cooked whole on the BBQ. To bake a whole sea-trout (approx. 1.5kg), we recommend wrapping in buttered foil, then baking at 180C for 25 – 30 minutes. For BBQ salmon or sea-trout, heat your grill to high. Rub the skin with a little oil and season inside. Stuff with sliced lemon and a few herbs, then wrap in foil. Place on the BBQ until fully cooked (15-35 minutes, depending on size).
