Garnish for poaching- dill, fresh lemon

Cooking instructions

Portions of these beautiful fish can be baked, pan-fried, grilled, poached or steamed. They are also fabulous, cooked whole on the BBQ. To bake a whole sea-trout (approx. 1.5kg), we recommend wrapping in buttered foil, then baking at 180C for 25 – 30 minutes. For BBQ salmon or sea-trout, heat your grill to high. Rub the skin with a little oil and season inside. Stuff with sliced lemon and a few herbs, then wrap in foil. Place on the BBQ until fully cooked (15-35 minutes, depending on size).

Over 100 years ago, wild salmon flowed freely through our factory doors. Our founder, Harry Forman (a.k.a. Lance Forman’s great-grandfather), was one of the first to realise that the King of Fish could be found in British waters, and we have been in love with it ever since. It is a true delicacy, with every fish encompassing totally unique characteristics depending on the life it has lived. However, due to fierce fishing restrictions that exist today, it is now nigh on impossible to source wild salmon in Britain. We are fortunate enough to be the last (and only!) supplier of the incredible River Tweed salmon in the world.

These beautiful fish are extremely scarce, and will therefore be sold on a first come first served basis. Only those who are signed up to our Wild Salmon & Seatrout Mailing List will be informed of their availability.
