A restaurant-quality parfait made with free-range chicken livers cooked slowly in a water bath to remove any hint of bitterness. We add cognac, season and seal with butter.

Serve with Mel Bagel Toasts and New Green Pickled Cucumbers with a glass of Biddenden Ortega 2017.
