Thinly sliced smoked tuna carpaccio, hand-sliced by our artisans, is a real gourmet treat. Ours is pole-and-line-caught yellowfin tuna that is cold smoked and air-dried in our kilns so you can really taste the fish. Serve as shown with a drizzle of good olive oil, shallots and capers.
