Zwyer sturgeon are not exposed to chemicals or growth-promoting hormones and the roe is collected at its absolute peak of size, flavour, colour and texture. Our caviar has been pasteurised.
Which to choose? Oscietra is the original Caspian species cured with finest grade fleur de sel; Baerii Premier Cru and Baerii Classic are from Siberian sturgeon. These are all farmed in Uruguay and we also now offer Beluga, the king of caviar, from Zwyer’s European farms.
