The Caspian Sea has been over fished. The water is polluted, the sturgeon endangered, ethics muddy. ZwyerCaviar is fully traceable, sustainable and eco responsible. Zwyer sturgeon are not exposed to chemicals or growth-promoting hormones and the roe is collected at its absolute peak of size, flavour, colour and texture. Our caviar has been pasteurised.
Which to choose?
Oscietra is the original Caspian species with a light brown to golden grain, cured with finest grade fleur de sel for a perfect balance of salt to its delicate, nutty flavour.
Baerii is from Siberian sturgeon, with an impressive dark shiny grain and creamy texture. Like Oscietra, the Baerri also comes from the wondrously pure Rio Negro in Uruguay.
We now also offer Beluga, the king of caviar, from Zwyer’s European farms, which is prized for its rarity, its larger, delicate pearls and its sublime, buttery texture.
