Long sliced or D-cut – What’s the difference?
A long sliced side is carved in one long piece along the length of the fillet, from head to tail. This means that the slices on the outside will be leaner, becoming fattier as they reach the belly. Perfect for a crowd with individual preferences, and beautiful on the plate.
D-cut slices are carved diagonally from the outside of the fillet down to the skin. This traditional cut has both lean and fatty flavour profiles in each slice, for a fuller flavour and texture. Conveniently the ideal shape and size for a bagel.
