Why do we so under-rate the mackerel? It’s a wonderful fish, full of flavour and packed with Omega 3s. But it has to be fresh, even for a pate. The mackerel we smoke is grade one quality and we only prepare the pate to order, but you can keep it in the fridge in its kilner jar for up to three weeks before opening.
