Description
A semi-soft cheese with blue veins running throughout giving it a marble like aesthetic. During maturation, each cheese is pierced by hand during the ripening process to encourage the growth of blue veins, giving the cheese its character and flavour. Made using pasteurised milk, this is inoculated with Penicillium Roqueforti (blue mould), which develops on the surface of the cheese. The ‘mouldy coat’ of each cheese can vary seasonally from darker ‘green and blues’ to paler ‘grey and blues’.
Serve with Seeded Crackers and Meopham’s Union Red Limited Edition.
