Winner of Best Soft White at the British Cheese Awards, Bix is fast becoming a British classic. A triple-cream cheese, extra cream is added to the milk before making the Bix cheese, ensuring it has a rich delectable flavour.
Developed in 2016, it is based on classic French cheeses and is matured for three weeks to form a rind of yeasts and moulds to break it down and produce a soft texture with a sharp creme-fraiche like core.
