A delight on toast; see our favourite recipe, below:

Add a teaspoon of vegetable oil to a pan over a medium heat. Add the girolles and cook until golden. Add some chopped herbs (parsley, thyme and chives work well), two finely chopped shallots and one finely sliced garlic clove. If you like, you can mix in some chorizo, then season with salt and pepper to taste. Serve on some freshly grilled bread and drizzle with a little olive oil. Enjoy.
