The Norfolk Bronze is a plump-breasted traditional breed that grows slowly for what Claire Symington of Seldom Seen Farm describes as “deep, resonating flavour”. Like Seldom Seen geese, the turkeys are allowed to roam free and nibble happily on grubs in between feasting royally on Claire’s farm-grown corn. Dry plucked by hand for crispy skin. Outstanding.
