A roulade is a brilliant choice if you’re cooking for a few people and dread the prospect of carving. It’s boneless so you really can’t go wrong. This particular roulade consists of layered pheasant and wild duck fillets filled with orange, thyme and pork stuffing, rolled in locally smoked bacon.
