This boneless ballotine is a great way to roast goose ­– a cinch to carve but no less flavoursome. We bone the birds, which come from Seldom Seen Farm, and roll them with a farce, or stuffing, of Old Spot pork, smoked bacon, Bramley apples and sage. This year we’ve updated the recipe to include turkey confit, which helps retain succulence during cooking. We also include a thermometer to help you know when the roast is ready, and a trivet of root vegetables for roasting. The geese are impeccably reared, roaming free and eating when they like. The flavour is unrivalled.

Free Range Goose, Pork, Smoked Back Bacon, Bramley Apple, Shallot, Caul Fat, Sage, Free Range EGG, Cream (MILK), Salt & Pepper.



Cooking Instructions

Defrost before cooking, do not cook from frozen – allow to come up to room temperature before placing in the oven.

Cook for a minimum of 2hrs or until the juices run clear at 180c on a bed of root vegetable, spooning the juices over the bird every 30 minutes or so. This time may vary , depends on the oven.

To test whether the product is ready insert a skewer into the centre at the thickest part and check that when withdrawn the tip is hot to the touch and the juices run clear.

Once cooked remove from oven, place on a rack, cover and allow to rest for 10 minutes.

Shelf life

Keep refrigerated. Minimum 6 days, unopened
