This boneless ballotine is a great way to roast goose – a cinch to carve but no less flavoursome. We bone the birds, which come from Seldom Seen Farm, and roll them with a farce, or stuffing, of Old Spot pork, smoked bacon, Bramley apples and sage. This year we’ve updated the recipe to include turkey confit, which helps retain succulence during cooking. We also include a thermometer to help you know when the roast is ready, and a trivet of root vegetables for roasting. The geese are impeccably reared, roaming free and eating when they like. The flavour is unrivalled.
