Chorizo is hot in more ways than one. Every menu worth its salt seems to feature a dish involving chorizo of some kind. This one, made by the Real Boar Co is a cured, salami-style chorizo that’s sliced and ready to eat. Let it air at room temperature before serving. Red wine and paprika provide the punch. The wild boar live in happy snorting, foraging family groups in the Cotswolds. Lucky fellas.
