Don’t even think about barbecuing ready cooked prawns. They’ll be dry and nasty. These brochettes are made with raw tiger prawns, peeled and generously skewered, with fresh herbs, chilli and olive oil. They only take a minute or so to cook – watch the prawns go pink and inhale those heavenly aromas.
