Chicken Liver & Brandy Parfait on Melba Toast with Runner Bean Chutney and Warm Green Bean Salad

Serves 3-4 as a starter.


  • Preparation:

    To make the melba toast sice bread very thinly, place on a baking tray, and bake in a moderate oven until dried and golden. Remove and place on plates. Whilst baking the bread steam green beans until tender and then toss in virgin olive oil and chopped shallots. Then open the jar of Chicken Liver & Brandy Parfait and remove the butter seal, scoop out each portion with a hot spoon (for a clean rounded shape) and place on the melba toast. To serve spoon a good helping of Kits Runner Bean Chutney and the steamed green beans onto the plate beside the toast.
