This is quite fancy pants. It’s inspired by a Roux brothers recipe – our chef Lloyd Hardwick learned his trade with them – involving a fillet of plaice lined with spinach then wrapped round salmon mousse with a seam of lobster through the centre. Cover with the herby breadcrumbs supplied, bake, and render your guests speechless with admiration.
