This home-made salt beef cleared up at the 2007 Great Taste Awards, winning a rare Three Star Gold award, Best Speciality from the East Midlands and the overall prize for Best Fresh Product. Just missed out on a Pulitzer. It’s cooked and left in the piece, which makes it very easy to slice and serve in a bagel. We like a good dollop of mustard with ours. To serve hot remove from bag and simmer gently in hot water until warmed through.
