• Description
  • A box of game-based specialities from the Wild Meat Company: one game roulade stuffed with orange and thyme, four pheasant fillets, one boneless pheasant with apple and raisin stuffing and six mixed game sausages.
• Cooking
  • Game Roulade: Preheat oven to 200ºC, gas mark 6, remove the packaging (you need to remove the cling film quite carefully so the roulade stays in shape!) and wrap it in foil with a seam at the top. Place on a baking tray and cook for approx 60 minutes. Do keep an eye on it though as conventional ovens do vary. When cooked, remove from oven and let it stand for a good 15 minutes (still covered in foil) before slicing. It should feel firm to the touch. Boneless pheasant: Preheat oven to 190oC. Wrap in foil with a little water or white wine and place in roasting tray. Cook for 45 mins, then remove from the foil and cook for a further 15 to 20 mins. If juices are still pink, put back in the oven for 10 mins.
