The meat for these elegant pies is from real free range pigs born and reared outdoors with freedom to roam in large paddocks in Blythburgh, Suffolk. They grow slowly at a much more natural rate than conventionally farmed pigs and in so doing develop fabulous flavour. To top it off the pastry is crisp and the seasoning is spot on.
