The only Caerphilly made by hand in Wales with unpasteurised milk and plenty of passion. It’s a beauty. Todd Trethowan, who makes it, is a Cornishman but his grandmother Eleanor Lewis, grew up in the Eglwysian parish just outside Caerphilly and made the cheese herself. The middle of the cheese is fresh, curdy, lemony lactic, under rind the flavour is mushroomy and the rind itself is very earthy. Try it.
