Game Roulade With Orange & Thyme

• Description
  • Layered pheasant and wild duck fillets with orange, thyme and pork stuffing, rolled in locally smoked bacon as prepared by the Wild Meat Company. An easy way to serve game and terrific value as each roulade serves up to six.
• Cooking
  • Preheat oven to 180ºC, gas mark 4, remove the packaging (you need to remove the cling film quite carefully so the roulade stays in shape!) and wrap it tightly in foil. Place on a baking tray and roast for approximately 25 to 35 mins. Do keep an eye on it though as conventional ovens do vary. Test it's cooked by inserting a skewer to make sure that the centre is piping hot and the juices run clear. When cooked, remove from oven and let it stand for a good 15 minutes (still covered in foil) before slicing.
