Dorstone Cheese

Dorstone is made from unpasteurised milk by Charlie Westhead and Haydn Roberts at Neal’s Yard Creamery near Dorstone in Herefordshire. It has a mousse-like fluffy texture with a lemony, zesty and slightly vegetabley flavour. To create the fluffy texture, the curd is manoeuvred into mesh sacks that look like large pillowcases and left to drain before the moulds are filled.
