Cooking instructions Preheat oven to 200ºC. Roast the duck in its cloth for 1 hour and 30 mins (the bird is wrapped in a buttered cloth to protect it during cooking and to allow the skin to brown and crisp). Rest for 15 mins before removing the cloth and slicing. Serve hot or cold.
