Freezer: Do not freeze
Pre-heat oven to 200ºC, gas mark 6. Sear outside of joint, all the way round. Gently warm your roasting tin, and place a knob of butter or a dash of olive oil. When oil is warm roll the joint in oil on all sides. Cook for 50 mins. Remove from oven, cover in foil and leave to rest for 15 mins. This will prevent the joint from expanding and splitting when the string is removed.
