Wrap the finest fillets of native breed beef from the Lake District in Savoy cabbage and chopped chestnut mushrooms and encase the lot in a light puff pastry. Bake in a 200C oven for 8 minutes before turning it down to 180C for another 8 minutes. Of course, you only need to do the oven bit.
Serve with Forman's superlative Creamed Potato with Black Truffle Shavings and Spiced Red Cabbage and a fine English red wine.
