Ballotine of Goose

The simple alternative to traditional goose or turkey. A glorious boned out Seldom Seen Farm goose prepared and stuffed here in the Forman & Field kitchens and pre cooked so all you need do is heat it through and crisp up the skin, no rising at dawn to get the bird in the oven. The stuffing is a tempting recipe of pork, apple and sage. Good value because, with no bones, nothing is wasted.

Place on a bed of root vegetable and roast in a hot (200'C) oven for 35-45 minutes or until the skin is crisp and brown and the roast hot throughout. To test doneness insert a skewer into the centre at the thickest part and check that when withdrawn the tip is hot to the touch and the juices run clear. Rest for 15 minutes before serving. To make a sauce pour off any excess fat and deglaze the pan with a glass of red wine. Add half a pint of stock and bubble until reduced to a syrupy consistency. Strain and pour over the meat.
